Ingredients
Pork
- 1 pork tenderloin (1 to 1.5 lbs)
- 2 tbsp olive oil
- 2 tbsp Keeping Up With The Joneses All Purpose Blend
Optional Vegetables
- 1 lb baby potatoes, halved
- 12 oz green beans
- 1 tbsp olive oil
- 1 tbsp Keeping Up With The Joneses All Purpose Blend
Instructions
1. Prep the Pork
Preheat oven to 425°F.
Pat the pork tenderloin dry and rub with olive oil.
Season generously on all sides with Keeping Up With The Joneses.
2. Prepare the Vegetables
Toss potatoes and green beans with olive oil and the remaining seasoning.
Spread on a sheet pan.
3. Roast
Place the pork tenderloin in the center of the pan.
Roast for 25-30 minutes, or until the internal temperature reaches 145°F.
4. Rest
Remove from the oven and let rest for 5-10 minutes before slicing.
5. Serve
Slice the pork and serve alongside the roasted potatoes and green beans.
